Flavorful Indian Shrimp Biryani Rice

Ingredients
  

  • For the Shrimp Marinade
  • 500 g shrimp, peeled and deveined
  • 1/2 cup yogurt
  • 1 tbsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala
  • 1 tbsp lemon juice
  • Salt to taste
  • For the Rice
  • 2 cups basmati rice, rinsed and soaked for 20 minutes
  • 4 cups water
  • 2 green cardamom pods
  • 1 bay leaf
  • 4 cloves
  • 1 small cinnamon stick
  • 1 tsp salt
  • For the Biryani Layering
  • 2 tbsp ghee or oil
  • 1 large onion, thinly sliced
  • 1 tomato, chopped
  • 1/2 tsp turmeric powder
  • 1 tsp biryani masala
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped mint leaves
  • 1/4 cup warm milk mixed with a pinch of saffron (optional)
  • Fried onions for garnish (optional)

Instructions
 

  • Marinate the shrimp and set aside.
  • Cook the basmati rice with whole spices until 80% done.
  • Fry onions until golden brown.
  • Add tomatoes, spices, and marinated shrimp.
  • Cook until shrimp turns pink and sauce thickens.
  • Layer rice over shrimp mixture.
  • Add saffron milk, herbs, and fried onions.
  • Cover and cook on low heat (dum) for 10–12 minutes.
  • Fluff and serve hot.
