Ingredients
  

  • For the Ceviche:
  • 1 lb (450g) medium shrimp, peeled, deveined, and cut into bite-sized pieces
  • ½ cup fresh lime juice (about 4–5 limes)
  • 1 medium tomato, diced
  • ½ small red onion, finely chopped
  • 1 small cucumber, diced
  • 1 small jalapeño, seeded and minced (optional, for spice)
  • ¼ cup fresh cilantro, chopped
  • 1 avocado, diced
  • Salt and black pepper to taste
  • Optional for Serving:
  • Tortilla chips or tostadas
  • Lime wedges

Instructions
 

  • Prepare the Shrimp: Chop raw shrimp into bite-sized pieces if not already done. Place shrimp in a glass or ceramic bowl (avoid metal bowls).
  • Marinate in Lime Juice: Pour fresh lime juice over the shrimp, ensuring they are fully submerged. Cover and refrigerate for 20–30 minutes, or until shrimp turn opaque and are “cooked” through.
  • Prepare Vegetables and Herbs: While shrimp is marinating, dice tomato, cucumber, red onion, and jalapeño. Chop fresh cilantro.
  • Combine Ingredients: Drain some of the lime juice from the shrimp if desired, then add the vegetables, cilantro, and diced avocado. Gently toss to combine. Season with salt and black pepper to taste.
  • Serve: Serve chilled in small glasses, bowls, or on tostadas. Garnish with extra cilantro and lime wedges if desired.
