Ingredients
  

  • 1 baguette or rustic Italian bread, sliced into ½-inch pieces
  • 2 tablespoons olive oil, plus extra for drizzling
  • 2 cloves garlic, halved
  • 2 cups cherry tomatoes, diced (or 3 medium tomatoes, diced)
  • ¼ cup fresh basil leaves, chopped
  • Salt and black pepper, to taste
  • 1 teaspoon balsamic glaze (optional)

Instructions
 

  • Step 1: Prepare Garlic Toast : Preheat the oven to 375°F (190°C). Arrange bread slices on a baking sheet. Brush each slice lightly with olive oil. Toast in the oven for 5–7 minutes until golden and crisp. Remove from the oven and rub each slice with halved garlic cloves.
  • Step 2: Prepare Tomato Mixture : In a bowl, combine diced tomatoes, chopped basil, 2 tablespoons olive oil, salt, and black pepper. Mix gently to combine, allowing the flavors to meld.
  • Step 3: Assemble Bruschetta : Spoon the tomato and basil mixture generously onto each garlic toast slice. Drizzle with extra olive oil and optional balsamic glaze.
  • Step 4: Serve : Serve immediately while the bread is still crisp. Garnish with extra basil leaves if desired.
