Step 1: Activate the yeast ; In a large bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until frothy — this means the yeast is active.
Step 2: Make the dough : Add melted butter, salt, and 2 cups of flour to the yeast mixture. Mix until a sticky dough forms. Gradually add the remaining flour until the dough pulls away from the sides of the bowl. Knead on a lightly floured surface for 6–8 minutes until smooth and elastic.
Step 3: Let the dough rise : Transfer the dough to a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise for 1 hour in a warm place until doubled in size.
Step 4: Shape the breadsticks : Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a long rope (about 6–8 inches long) and place on a parchment-lined baking sheet.
Step 5: Second rise : Cover the shaped dough with a towel and let it rise again for 15–20 minutes until slightly puffy.
Step 6: Bake the breadsticks : Preheat the oven to 400°F (200°C). Bake for 12–15 minutes, or until the breadsticks are golden brown.
Step 7: Prepare the garlic butter : While baking, melt butter and mix with minced garlic, Italian seasoning, and parsley.
Step 8: Brush and finish : Once the breadsticks come out of the oven, immediately brush them generously with garlic butter. Sprinkle lightly with salt or Parmesan if desired.
Step 9: Make the marinara dip : Heat olive oil in a small saucepan. Add garlic and sauté for 30 seconds. Stir in tomato sauce, herbs, sugar, salt, and pepper. Simmer on low for 10–15 minutes, stirring occasionally.
