Ingredients
  

  • For the Salmon Packets:
  • 4 salmon fillets (about 6 oz each, skin removed if preferred)
  • 3 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 lemon, thinly sliced
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • Salt and black pepper, to taste
  • 1 cup asparagus, green beans, or zucchini (optional, for inside the packets)
  • Aluminum foil sheets (about 12x16 inches each)
  • For Garnish (optional):
  • Extra chopped dill or parsley
  • Lemon wedges for serving

Instructions
 

  • Step 1: Preheat the Oven : Preheat your oven to 400°F (200°C). If grilling, preheat the grill to medium-high heat (about 375°F).
  • Step 2: Prepare the Garlic Butter Mixture : In a small bowl, whisk together melted butter, minced garlic, olive oil, lemon juice, salt, and pepper. Stir in chopped dill for a fragrant, herby touch.
  • Step 3: Assemble the Foil Packets : Lay out four sheets of aluminum foil on a flat surface. Place a salmon fillet in the center of each sheet. Drizzle each fillet generously with the garlic butter mixture. Top each fillet with a few lemon slices and, if desired, surround the salmon with vegetables. Fold the sides of the foil over the salmon to create a sealed packet, making sure it’s fully enclosed but with enough space inside for heat circulation.
  • Step 4: Bake or Grill :To Bake: Place the packets on a baking sheet and bake for 15–20 minutes, depending on the thickness of your salmon. To Grill: Place the packets on the grill and cook for 12–15 minutes, with the lid closed.
  • Step 5: Check for Doneness :Carefully open one packet and check if the salmon flakes easily with a fork. Be cautious of the hot steam when opening.
  • Step 6: Serve : Transfer the salmon to a plate, drizzle any remaining butter sauce from the packet over the top, and garnish with extra dill or parsley. Serve immediately with rice, roasted potatoes, or a light green salad.
