Ingredients
  

  • For the Shrimp
  • 1 lb (450 g) large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp paprika (optional)
  • 1 tsp Italian seasoning (optional)
  • For the Garlic Butter Sauce
  • 3 tbsp butter
  • 4 garlic cloves, minced
  • 1 tbsp lemon juice
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped parsley
  • For the Zoodles
  • 3 medium zucchinis, spiralized
  • Salt to lightly season

  • Season and sauté the shrimp.
  • Prepare the garlic butter sauce.
  • Lightly cook the zoodles.
  • Combine shrimp, sauce, and zoodles.
  • Garnish and serve warm.

Instructions
 

  • Step 1: Prepare the Zoodles : Spiralize the zucchinis into noodles using a spiralizer. Place them on a paper towel and lightly sprinkle salt to draw out moisture. Let them sit while you prepare the shrimp.
  • Step 2: Cook the Shrimp : Heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt, pepper, paprika, and Italian seasoning. Add shrimp to the pan and cook 2–3 minutes per side until pink and opaque. Remove and set aside.
  • Step 3: Make the Garlic Butter Sauce : In the same skillet, reduce heat to medium. Add butter and garlic. Sauté for 30 seconds to 1 minute until fragrant but not browned. Stir in lemon juice and half of the Parmesan cheese.
  • Step 4: Cook the Zoodles : Add the zoodles to the skillet and toss gently in the sauce for 1–2 minutes. Do not overcook—they should remain crisp.
  • Step 5: Combine Everything : Return the shrimp to the skillet and toss with the zoodles and sauce. Sprinkle remaining Parmesan and chopped parsley.
  • Step 6: Serve : Serve immediately while warm.
