Ingredients

  • 1 pound (450 g) sirloin, ribeye, or tenderloin steak, cut into 1-inch cubes
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
  • 1 tablespoon fresh parsley, chopped
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Optional garnish: extra parsley, red pepper flakes, or lemon wedges

Instructions

  • Pat the steak cubes dry with paper towels to ensure proper searing. Season generously with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat. Once hot, add the steak bites in a single layer. Avoid overcrowding the pan; cook in batches if necessary.
  • Sear the steak bites for 2–3 minutes on each side until browned and cooked to your desired doneness. Remove steak from the skillet and set aside.
  • Reduce heat to medium. Add butter to the skillet and allow it to melt. Add minced garlic, thyme, and rosemary, sautéing for 1–2 minutes until fragrant.
  • Return the steak bites to the skillet and toss in the garlic butter and herbs until well-coated. Cook for an additional 1–2 minutes to heat through and absorb flavors.
  • Stir in fresh parsley just before serving for added color and freshness.
  • Serve immediately with your choice of sides.
