Ingredients
  

  • For the Salmon
  • 4 salmon fillets (5–6 oz each)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • ½ teaspoon smoked paprika (optional)
  • For the Roasted Carrots
  • 4–5 large carrots, peeled and cut into sticks
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste
  • ½ teaspoon dried thyme or rosemary
  • For Garnish
  • Fresh parsley, chopped
  • Lemon wedges

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Peel and slice carrots into even sticks to ensure uniform roasting.
  • Toss carrots with olive oil, honey, thyme, salt, and pepper. Spread them on the sheet pan.
  • Roast the carrots for 10 minutes to begin caramelization.
  • Meanwhile, prepare the glaze by combining Dijon, honey, garlic, lemon, olive oil, and seasonings.
  • Remove the pan from the oven and push carrots to one side.
  • Add salmon fillets skin-side down on the empty side of the sheet pan.
  • Brush the honey Dijon mixture generously over the salmon.
  • Return pan to oven and bake for 12–15 minutes, depending on salmon thickness.
  • Remove from the oven once salmon flakes easily with a fork.
  • Garnish with fresh parsley and lemon wedges.
  • Serve immediately while warm and glazed.
