- 8 small flour tortillas
- 2 cups shredded cheese (cheddar, mozzarella, or a blend)
- 2 tbsp butter or olive oil (for pan-frying)
- Black olives (for ghost eyes and mouth)
- Optional fillings: cooked chicken, sautéed peppers, or beans
Prepare Tortillas: Using a ghost-shaped cookie cutter (or cut freehand with a knife), cut each tortilla into ghost shapes.
Assemble Quesadillas: Place one ghost tortilla on a clean surface. Sprinkle a generous layer of shredded cheese on top (add optional fillings if desired). Place another ghost tortilla on top to seal.
Cook Quesadillas: Heat a skillet or griddle over medium heat. Brush with butter or drizzle lightly with olive oil. Place quesadillas in the skillet and cook for 3–4 minutes per side, until golden brown and cheese has melted.
Decorate the Ghosts: Cut small pieces of black olives to create eyes and a mouth. Press them gently into the quesadilla surface while still warm.
Serve: Transfer to a plate and serve immediately with salsa, guacamole, or sour cream.
