Greek Chicken Skewers with Tzatziki

Ingredients
  

  • For the Chicken Skewers
  • 1 ½ pounds boneless, skinless chicken breasts, cut into cubes
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt to taste
  • Freshly ground black pepper to taste
  • For the Tzatziki Sauce
  • 1 cup plain Greek yogurt
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, finely minced
  • 1 tablespoon fresh dill, chopped
  • Salt to taste

Instructions
 

  • In a large bowl, combine olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper.
  • Add chicken pieces to the marinade and toss until evenly coated. Cover and refrigerate for at least 30 minutes.
  • While the chicken marinates, prepare the tzatziki by mixing Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, and salt in a bowl. Refrigerate until ready to serve.
  • Preheat a grill or grill pan to medium-high heat.
  • Thread the marinated chicken pieces onto skewers.
  • Grill the skewers for 12 to 15 minutes, turning occasionally, until the chicken is fully cooked and lightly charred.
  • Remove from the grill and allow the skewers to rest for a few minutes before serving.
