1 pound (450 g) pizza dough (homemade or store-bought)
1 tablespoon olive oil (for brushing)
½ cup barbecue sauce (plus extra for topping)
1 cup cooked grilled chicken breast, sliced or shredded
1½ cups shredded mozzarella cheese
½ small red onion, thinly sliced
¼ cup chopped fresh cilantro (for garnish)
For the Chicken (if grilling fresh):
2 small chicken breasts
1 tablespoon olive oil
Salt and pepper to taste
2 tablespoons barbecue sauce
Instructions
Preheat the Grill: Heat your grill to medium-high heat (around 400°F / 200°C). Lightly oil the grates to prevent sticking. Prepare the Chicken (if cooking fresh): Brush chicken breasts with olive oil and season with salt and pepper. Grill for 4–5 minutes per side or until fully cooked (internal temperature 165°F / 74°C). Brush with barbecue sauce during the last minute of grilling. Remove and slice thinly.
Prepare the Pizza Dough: Roll out the dough on a lightly floured surface into a 12-inch circle or rectangle. Brush both sides lightly with olive oil.
Grill the Pizza Base: Place the dough directly on the grill grates. Cook for 2–3 minutes until bubbles form and the bottom has grill marks. Flip the dough using tongs or a spatula.
Add the Toppings: Spread a layer of barbecue sauce on the cooked side of the dough. Add a generous layer of mozzarella cheese. Arrange sliced grilled chicken and red onions evenly on top.
Finish Grilling: Close the grill lid and cook for another 5–7 minutes until the cheese melts and the crust is golden and crisp. If using an oven grill or grill pan, cover with a lid or foil to trap heat.
Garnish and Serve: Remove the pizza from the grill and drizzle a bit of extra barbecue sauce on top . Sprinkle with fresh cilantro. Slice and serve immediately.
