For Tomato Soup:

  • 2 tablespoons olive oil or butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz / 400 g) crushed tomatoes (or fresh ripe tomatoes, blanched and pureed)
  • 2 cups vegetable or chicken broth
  • 1 teaspoon sugar (to balance acidity)
  • Salt and black pepper, to taste
  • ½ teaspoon dried basil or oregano (optional, for flavor)
  • ¼ cup heavy cream or whole milk (for creaminess, optional)

Instructions
