Ingredients
  

  • For the Salad:
  • 2 large boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 large heads of romaine lettuce, chopped
  • 1 cup cherry tomatoes (optional, for color)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup croutons (store-bought or homemade)
  • For the Homemade Caesar Dressing:
  • 1/3 cup mayonnaise (or Greek yogurt for a lighter version)
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 small garlic clove, minced
  • 1 tsp Worcestershire sauce
  • 2 anchovy fillets, minced (optional but traditional)
  • 1/4 cup olive oil
  • Salt and black pepper, to taste
  • For Homemade Croutons (optional):
  • 2 cups cubed French bread or baguette
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Pinch of salt

Instructions
 

  • Step 1: Prepare the Chicken : In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Rub the mixture evenly over both sides of the chicken breasts. Preheat a grill or grill pan to medium-high heat. Grill chicken for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes before slicing thinly.
  • Step 2: Make the Homemade Croutons (Optional) : Preheat oven to 375°F (190°C). Toss bread cubes with olive oil, garlic powder, and salt. Spread evenly on a baking sheet and bake for 8–10 minutes, or until golden and crispy. Let cool completely before using.
  • Step 3: Prepare the Caesar Dressing : In a medium bowl, whisk together mayonnaise, lemon juice, Dijon mustard, garlic, Parmesan, Worcestershire sauce, and anchovies (if using). Slowly drizzle in olive oil while whisking continuously until creamy. Season with salt and pepper to taste. Taste and adjust lemon or Parmesan if needed. (You can also make this dressing in a blender for a smoother texture.)
  • Step 4: Assemble the Salad : In a large mixing bowl, combine chopped romaine lettuce, cherry tomatoes (if using), and croutons. Add about half of the Caesar dressing and toss gently to coat. Arrange the salad on serving plates or a platter. Top with sliced grilled chicken and sprinkle generously with grated Parmesan cheese. Drizzle with the remaining dressing or serve on the side.
