Ingredients
  

  • For the Lemon Pepper Chicken:
  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 lemon (zested and juiced)
  • 2 tsp freshly cracked black pepper
  • 1 tsp salt (or to taste)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp dried thyme (optional)
  • For the Asparagus:
  • 1 bunch (about 1 lb / 450 g) fresh asparagus, trimmed
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • ½ tsp lemon zest
  • Lemon wedges (for serving)

Instructions
 

  • Step 1: Prepare the Chicken Marinade : In a small bowl, whisk together olive oil, lemon juice, lemon zest, black pepper, salt, garlic powder, onion powder, and thyme. Place chicken breasts in a resealable bag or shallow dish. Pour marinade over the chicken and toss to coat evenly. Let it marinate for at least 30 minutes (or up to 4 hours in the refrigerator) for maximum flavor.
  • Step 2: Prepare the Asparagus : Rinse and trim the woody ends of the asparagus. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat. Set aside while preheating the grill.
  • Step 3: Grill the Chicken : Preheat the grill (or grill pan) to medium-high heat (about 400°F / 200°C). Lightly oil the grill grates. Place marinated chicken breasts on the grill and cook for 5–6 minutes per side, or until internal temperature reaches 165°F (74°C). Remove from the grill and let rest for 5 minutes before slicing.
  • Step 4: Grill the Asparagus : While the chicken rests, add asparagus to the grill. Grill for 3–4 minutes, turning occasionally, until tender-crisp and slightly charred. Sprinkle with lemon zest for a final burst of flavor.
  • Step 5: Assemble and Serve : Slice the grilled chicken and plate with the asparagus. Squeeze fresh lemon juice over both for a bright, fresh finish. Serve hot and enjoy the balance of smoky, citrusy, and peppery goodness!
