Grilled Pineapple Chicken Skewers

Ingredients
  

  • For the Chicken and Marinade
  • 500 g chicken breast or thighs, cut into 1-inch cubes
  • 1/2 cup pineapple juice
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • For the Skewers
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into squares
  • 1 yellow bell pepper, cut into squares
  • 1 red onion, cut into chunks
  • Wooden or metal skewers

Instructions
 

  • Prepare the marinade by mixing pineapple juice, soy sauce, honey, lime juice, garlic, ginger, paprika, salt, and pepper.
  • Add chicken cubes and coat well. Refrigerate for 1–4 hours.
  • Soak wooden skewers in water for 20–30 minutes if using.
  • Thread chicken, pineapple, and vegetables onto skewers alternately.
  • Preheat grill or grill pan to medium-high heat.
  • Grill skewers for 12–15 minutes, turning occasionally until chicken is golden and cooked.
  • Optionally brush with leftover (unused) marinade or glaze during grilling.
  • Serve hot with rice, salad, or dipping sauces.
