Ingredients
  

  • Main:
  • 1 1/2 lbs (680 g) ground beef (85% lean)
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 (14 oz / 400 g) cans diced tomatoes (with juice)
  • 1 (6 oz / 170 g) can tomato paste
  • 2 (15 oz / 425 g) cans kidney beans, drained and rinsed
  • 2 cups beef broth (low-sodium preferred)
  • Spices:
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional, for heat)
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • Salt, to taste

Instructions
 

  • Brown the Beef : In a large pot or Dutch oven, heat olive oil over medium-high heat. Add ground beef, breaking it up with a spoon, and cook until browned, about 6–7 minutes. Drain excess fat if necessary.
  • Sauté Aromatics : Add onion, bell pepper, and garlic. Cook for 4–5 minutes until softened.
  • Add Spices : Stir in chili powder, cumin, paprika, cayenne, oregano, black pepper, and salt. Cook for 1 minute to bloom the spices.
  • Add Tomatoes and Broth : Stir in diced tomatoes, tomato paste, and beef broth. Mix well.
  • Add Beans : Stir in kidney beans.
  • Simmer : Reduce heat to low, cover partially, and simmer for 30–35 minutes, stirring occasionally.
  • Taste and Adjust : Add more salt, pepper, or cayenne to taste.
