Ingredients
  

  • For the Taco Filling:
  • 1 lb (450 g) ground beef (80–85% lean)
  • 2 medium russet potatoes, peeled and diced into small cubes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground oregano
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ cup tomato sauce (or diced tomatoes)
  • ½ cup water or beef broth
  • 2 tablespoons vegetable oil
  • For Serving:
  • 8 small corn or flour tortillas (warmed)
  • Fresh cilantro leaves
  • Lime wedges
  • Chopped onions, tomatoes, or lettuce
  • Shredded cheese (optional)
  • Salsa or hot sauce
  • Sliced avocado or guacamole

Instructions
 

  • Step 1: Prepare the Potatoes : Heat 1 tablespoon oil in a large skillet over medium heat. Add diced potatoes and cook for 10–12 minutes, stirring occasionally until golden and tender. Remove and set aside on a plate.
  • Step 2: Cook the Ground Beef : In the same skillet, add another 1 tablespoon oil. Add the chopped onion and garlic; sauté for 2 minutes until fragrant. Add ground beef and cook for 5–7 minutes, breaking it apart with a spatula until browned. Drain any excess fat.
  • Step 3: Add the Spices and Sauce : Sprinkle in cumin, chili powder, paprika, oregano, salt, and pepper. Stir well to coat the beef with the seasonings. Add tomato sauce and water (or broth). Mix and bring to a simmer; cook uncovered for 5–7 minutes, until slightly thickened.
  • Step 4: Combine the Potatoes : Return the cooked potatoes to the skillet with the beef mixture. Stir well to combine and let simmer for another 3 minutes to let flavors meld. Taste and adjust seasoning if needed.
  • Step 5: Assemble the Tacos : Warm the tortillas on a dry skillet or open flame for a few seconds on each side. Spoon the beef and potato mixture into each tortilla. Add your desired toppings — onions, cilantro, cheese, avocado, or salsa. Serve hot with lime wedges on the side.
