Step 3: Add Tomatoes and Broth : Stir in diced tomatoes (with their juice) and tomato paste. Pour in broth and mix well to combine everything evenly. Bring the mixture to a boil, then reduce heat to low.
Step 4: Simmer : Cover the skillet with a lid and simmer for 18–20 minutes, or until the rice is fully cooked and the liquid is absorbed. Stir occasionally to prevent sticking. If the rice is not fully tender, add ¼ cup more broth and continue cooking for a few extra minutes.
Step 5: Finish and Serve : Once cooked, fluff the mixture gently with a fork. Taste and adjust seasoning if needed. Sprinkle with shredded cheese (if using) and cover the skillet for a minute to let it melt. Garnish with fresh parsley or cilantro.
