Ingredients
  

  • For the Filling
  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 bell pepper, diced (red or green)
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup canned diced tomatoes, drained
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup shredded cheddar cheese
  • For the Cornbread Topping
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs

Instructions
 

  • Step 1: Preheat the oven to 400°F (200°C) and grease a 9x9-inch baking dish.
  • Step 2: In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
  • Step 3: Add diced onion, bell pepper, and garlic to the skillet. Sauté for 3–4 minutes until softened.
  • Step 4: Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Mix well.
  • Step 5: Add diced tomatoes, corn, black beans, and shredded cheddar. Stir until combined and remove from heat.
  • Step 6: In a separate bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  • Step 7: Add milk, melted butter, and eggs to the dry ingredients. Stir until smooth.
  • Step 8: Spread the beef filling evenly in the prepared baking dish. Pour the cornbread batter over the top, spreading gently to cover the filling.
  • Step 9: Bake for 25–30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  • Step 10: Remove from oven and let cool for 5 minutes before serving.
