Ingredients
  

  • For the Meatloaf
  • 1½ lbs (680 g) ground pork
  • 1 cup breadcrumbs (plain or panko)
  • ½ cup milk
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 large egg
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • ½ tsp dried thyme or Italian seasoning
  • 1 tbsp olive oil (for sautéing onion)
  • For the Glazed Topping
  • ⅓ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon or yellow mustard
  • 1 tbsp apple cider vinegar

Instructions
 

  • Preheat oven to 180°C / 350°F. Lightly grease a loaf pan or line with parchment paper.
  • Soften the breadcrumbs: In a bowl, mix breadcrumbs and milk. Let soak for 2–3 minutes.
  • Sauté onion: Heat olive oil in a pan, sauté onion until soft, about 4–5 minutes. Add garlic and cook 30 seconds. Cool slightly.
  • Make the meat mixture: In a large bowl, combine ground pork, soaked breadcrumbs, sautéed onion and garlic, egg, ketchup, Worcestershire sauce, and seasonings. Mix gently.
  • Shape meatloaf: Press mixture into the prepared loaf pan evenly.
  • Prepare glaze: Mix all glaze ingredients in a small bowl.
  • Top and bake: Spread half the glaze over the meatloaf. Bake for 40 minutes.
  • Finish glazing: Remove from oven, spread remaining glaze, and return to oven for 15–20 minutes until fully cooked.
  • Rest: Let meatloaf rest for 10 minutes before slicing.
