Ingredients
  

  • For the Hash Browns:
  • 2 medium russet potatoes, peeled and grated
  • 2 tablespoons all-purpose flour (optional, for binding)
  • 1 egg (optional, for binding)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil or butter
  • For the Fried Eggs:
  • 2–4 large eggs
  • 1 tablespoon butter or olive oil
  • Salt and pepper, to taste
  • For Serving:
  • 1 ripe avocado, sliced or mashed
  • Fresh herbs (parsley or chives), for garnish
  • Optional toppings: chili flakes, hot sauce, or shredded cheese

Instructions
 

  • Step 1: Prepare the Potatoes : Peel and grate the potatoes. Place grated potatoes in a clean kitchen towel and squeeze out as much excess water as possible. Transfer to a mixing bowl.
  • Step 2: Season and Bind : Add salt, pepper, and optional flour and egg for binding. Mix until combined.
  • Step 3: Cook the Hash Browns : Heat olive oil or butter in a large non-stick skillet over medium heat. Divide the potato mixture into portions and flatten into patties. Cook each side for 4–5 minutes until golden brown and crispy. Transfer to a paper towel-lined plate to remove excess oil.
  • Step 4: Fry the Eggs : In a separate pan, heat butter or oil over medium heat. Crack eggs into the pan and cook until whites are set but yolks remain runny (or to your preferred doneness). Season with salt and pepper.
  • Step 5: Assemble the Dish : Place hash browns on a plate, top with fried eggs, and add avocado slices on the side. Garnish with fresh herbs, chili flakes, or a drizzle of hot sauce.
