Ingredients
  

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 2 cups corn kernels (fresh or frozen)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon Old Bay seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 medium potatoes, peeled and diced
  • 4 cups chicken broth or seafood broth
  • 1 1/2 cups heavy cream or half-and-half
  • Salt and black pepper to taste
  • 2 tablespoons flour (optional, for thickening)
  • 2 tablespoons chopped parsley or green onions for garnish

Instructions
 

  • Heat butter and olive oil in a large pot over medium heat.
  • Add onion, celery, garlic, and carrots. Cook until softened.
  • Stir in smoked paprika, Old Bay, thyme, and cayenne.
  • Add potatoes and corn, stirring to coat with the spices.
  • Pour in the broth and simmer until potatoes are tender.
  • Whisk flour with a small amount of broth (optional) and stir into the pot to thicken.
  • Add cream and season with salt and pepper.
  • Add shrimp and cook until pink and firm.
  • Garnish and serve warm.
