  • 4 large egg yolks – creates a smooth custard base.
  • ¼ teaspoon salt – balances the sweetness.

Instructions
 

  • Peel and dice the fresh peaches.
  • Toss peaches with sugar and lemon juice, then let them macerate for 20–30 minutes.
  • Blend half the peaches into a puree and reserve the rest.
  • Heat the heavy cream and milk until steaming.
  • Whisk egg yolks, sugar, and salt until smooth.
  • Temper the egg mixture with the warm cream.
  • Cook the custard until it coats the back of a spoon.
  • Stir in vanilla and chill completely.
  • Mix the peach puree and diced peaches into the chilled custard.
  • Churn the mixture in an ice cream maker until creamy.
  • Transfer to a freezer-safe container and freeze for 3–4 hours.
  • Scoop, garnish as desired, and serve.
