For the Cake
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups fresh rhubarb diced
For the Streusel Topping
- ½ cup brown sugar
- ½ cup all-purpose flour
- 1 teaspoon ground cinnamon
- ¼ cup cold butter cubed
Optional Glaze
- ½ cup powdered sugar
- 1 tablespoon milk
Preheat the oven to 350°F (175°C). Grease and line a 9-inch square baking pan.
In a medium bowl, combine the brown sugar, flour, and cinnamon. Cut in the cold butter until the mixture becomes crumbly. Set aside.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large mixing bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, then mix in the vanilla extract.
Gradually add the dry ingredients and sour cream alternately, mixing just until combined. Fold in the diced rhubarb.
Spread the batter evenly into the prepared baking pan and sprinkle the streusel topping evenly over the surface.
Bake for 40–45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow the cake to cool for 15 minutes. If desired, whisk together the powdered sugar and milk, then drizzle over the cake.
Slice into squares and serve warm or at room temperature.
1. For the best texture, avoid overmixing the batter and stir only until the ingredients are combined.
2. Use fresh rhubarb whenever possible for the brightest flavor and most tender texture.
3. Let the coffee cake cool for at least 15 minutes before slicing to help it set and make cleaner cuts.
