Ingredients

  • For the Chicken Meatballs
  • 1 lb (450 g) ground chicken
  • 1 egg
  • ½ cup breadcrumbs
  • 2 garlic cloves, minced
  • 1 tablespoon chopped fresh parsley (optional)
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • For the Honey Garlic Sauce
  • ¼ cup honey
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • ½ cup water
  • Optional: pinch of red pepper flakes
  • For Serving
  • Sliced scallions
  • Extra parsley
  • Cooked rice or noodles

Instructions

  • Step 1: Prepare the Meatballs : In a large bowl, combine ground chicken, egg, breadcrumbs, garlic, parsley, soy sauce, sesame oil, salt, and pepper. Mix gently with your hands or a spoon until ingredients are evenly combined. Shape the mixture into 1-inch meatballs using slightly wet hands or a cookie scoop.
  • Step 2: Cook the Meatballs : Heat a large skillet over medium heat with a drizzle of oil. Add meatballs in a single layer without overcrowding. Cook for 10–12 minutes, turning occasionally, until they are browned and fully cooked (internal temperature should reach 165°F or 74°C).
  • Step 3: Make the Honey Garlic Sauce : In a small saucepan, combine honey, soy sauce, rice vinegar, garlic, ginger, water, and red pepper flakes if using. Bring to a gentle simmer over medium heat. Stir in the cornstarch slurry. Cook for 1–2 minutes until the sauce thickens and becomes glossy.
  • Step 4: Combine Meatballs and Sauce : Add the cooked meatballs to the sauce. Gently stir to coat each meatball thoroughly. Simmer for 2–3 minutes to allow flavors to blend.
