Honey Garlic Chicken with Stir-Fried Vegetables

Ingredients
  

  • For the Honey Garlic Chicken
  • • 500 g chicken breast or thighs, cut into bite-size pieces
  • • 2 tablespoons soy sauce
  • • 3 tablespoons honey
  • • 3 garlic cloves, minced
  • • 1 tablespoon rice vinegar or lemon juice
  • • 1 tablespoon cornstarch
  • • 2 tablespoons water
  • • 1 tablespoon oil for cooking
  • • Salt and pepper to taste
  • • Optional: chili flakes or sriracha for spice
  • For the Stir-Fried Vegetables
  • • 1 cup broccoli florets
  • • 1 carrot, sliced
  • • 1 bell pepper, sliced
  • • 1 small zucchini, sliced
  • • 1 small onion, sliced
  • • 1 tablespoon soy sauce
  • • 1 teaspoon sesame oil (optional)
  • • 1 tablespoon cooking oil
  • • Salt and pepper to taste

Instructions
 

  • Step 1: Marinate the Chicken : In a bowl, mix soy sauce, honey, garlic, vinegar, salt, and pepper. Add chicken pieces and mix well. Marinate for at least 10 minutes while preparing vegetables.
  • Step 2: Prepare the Honey Garlic Sauce : Mix cornstarch with water to form a slurry. Add to the marinade mixture to create a thickened sauce.
  • Step 3: Cook the Chicken : Heat 1 tablespoon oil in a pan over medium heat. Add chicken (reserve extra marinade for later). Cook for 6–8 minutes until browned and cooked through. Add remaining marinade and simmer until thick and glossy.
  • Step 4: Stir-Fry the Vegetables : In another pan, heat oil. Add onions, carrots, and broccoli first (they take longer to cook). Add bell peppers and zucchini after 2–3 minutes. Season with soy sauce, sesame oil, salt, and pepper. Stir-fry until bright and slightly tender but still crisp.
  • Step 5: Assemble and Serve : Serve the honey garlic chicken over or beside the stir-fried vegetables. Pair with rice, quinoa, brown rice, or noodles for a complete meal.
