Step 1: Marinate the Chicken : In a bowl, mix soy sauce, honey, garlic, vinegar, salt, and pepper. Add chicken pieces and mix well. Marinate for at least 10 minutes while preparing vegetables.
Step 2: Prepare the Honey Garlic Sauce : Mix cornstarch with water to form a slurry. Add to the marinade mixture to create a thickened sauce.
Step 3: Cook the Chicken : Heat 1 tablespoon oil in a pan over medium heat. Add chicken (reserve extra marinade for later). Cook for 6–8 minutes until browned and cooked through. Add remaining marinade and simmer until thick and glossy.
Step 4: Stir-Fry the Vegetables : In another pan, heat oil. Add onions, carrots, and broccoli first (they take longer to cook). Add bell peppers and zucchini after 2–3 minutes. Season with soy sauce, sesame oil, salt, and pepper. Stir-fry until bright and slightly tender but still crisp.
Step 5: Assemble and Serve : Serve the honey garlic chicken over or beside the stir-fried vegetables. Pair with rice, quinoa, brown rice, or noodles for a complete meal.
