4 bone-in or boneless pork chops (about 6 oz each)
Salt and black pepper, to taste
1 tbsp olive oil
3 tbsp unsalted butter
For the Honey Garlic Glaze:
¼ cup honey
4 cloves garlic, minced
2 tbsp soy sauce
1 tsp apple cider vinegar or lemon juice
¼ tsp red pepper flakes (optional, for a slight kick)
For the Roasted Potatoes:
1 lb baby potatoes, halved
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried rosemary or thyme
Salt and black pepper, to taste
Instructions
Preparing the Roasted Potatoes: Preheat oven to 400°F (200°C). In a bowl, toss halved potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Spread evenly on a baking sheet and roast for 25–30 minutes, turning halfway, until golden and crispy.
Cooking the Pork Chops: Season pork chops with salt and pepper on both sides. Heat olive oil and butter in a large skillet over medium-high heat. Sear pork chops for 3–4 minutes per side until golden brown. Reduce heat to medium; pour in honey, garlic, soy sauce, and apple cider vinegar. Cook for 3–5 minutes, spooning the glaze over pork chops until thickened and pork is cooked through (internal temperature 145°F / 63°C).
