Step 1: Cook the Cilantro Rice : In a saucepan, heat olive oil or butter over medium heat. Add rice and toast for 1–2 minutes until lightly fragrant. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked. Remove from heat, fluff with a fork, and stir in lime juice, zest, and chopped cilantro. Set aside.
Step 2: Prepare the Honey Lime Glaze : In a small bowl, whisk together honey, soy sauce, lime juice, lime zest, minced garlic, and red pepper flakes. Set aside for glazing later.
Step 3: Cook the Salmon : Pat salmon fillets dry and season both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add salmon, skin-side down if applicable, and sear for 3–4 minutes per side until golden brown and almost cooked through. Add butter and pour the prepared honey-lime glaze into the pan. Spoon the glaze over the salmon continuously for 1–2 minutes until it thickens slightly and coats the fillets. Remove from heat once the salmon is caramelized and cooked to your liking.
Step 4: Assemble the Bowls : Spoon cilantro rice into serving bowls or plates. Top with glazed salmon fillet. Drizzle extra sauce from the pan over the salmon. Garnish with extra lime wedges and fresh cilantro.
