Ingredients
  

For the Meatloaf:

  • 2 lbs ground beef (80/20 recommended)
  • 1 cup breadcrumbs (plain or Italian-style)
  • 2 large eggs
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • ½ cup milk
  • 2 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp smoked paprika

For the Ketchup Glaze:

  • ¾ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard

For Decoration:

  • 1 green bell pepper stem (for the pumpkin “stem”)
  • Optional: black olives or sliced cheese for spooky face details

Instructions
 

  • Prepare the Meatloaf Mixture Preheat oven to 375°F (190°C). In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, milk, Worcestershire sauce, ketchup, and seasonings. Mix until well combined but not overworked.
  • Shape the Pumpkin Transfer mixture to a parchment-lined baking sheet. Shape into a round pumpkin-like mound. Use your hands or a spatula to define ridges around the “pumpkin.” Insert a green bell pepper stem on top to mimic the pumpkin stem.
  • Carve the Jack-O’-Lantern Using a small knife or spoon, carefully carve out triangle “eyes” and a creepy “mouth.” Remove carved meat and set aside (or bake separately as meatballs).
  • Apply the Glaze In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard. Brush generously over the meatloaf, making sure it’s evenly coated.
  • Bake Bake for 50–55 minutes, or until internal temperature reaches 160°F (71°C). Allow to rest for 10 minutes before slicing.
