Step 1: Make the Curry Pastry : In a large bowl, whisk together the flour, curry powder, turmeric, and salt. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse breadcrumbs. Gradually add ice-cold water, 1 tablespoon at a time, until the dough comes together. Form the dough into a ball, flatten it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes to rest.
Step 2: Prepare the Beef Filling : Heat oil in a skillet over medium heat. Add the onion, garlic, and Scotch bonnet pepper. Sauté until fragrant and softened. Add the ground beef and cook until browned, breaking it apart as it cooks. Stir in thyme, allspice, curry powder, paprika, salt, and black pepper. Mix well. Add breadcrumbs and beef broth; stir until the mixture thickens (about 5–7 minutes). Remove from heat and let the filling cool completely before assembling.
Step 3: Assemble the Patties :Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. On a floured surface, roll out the chilled dough to about ⅛-inch thickness. Cut out circles (about 6 inches in diameter) using a bowl or cutter. Place 2–3 tablespoons of beef filling onto one half of each circle. Fold over and press the edges together using a fork to seal. Brush tops with beaten egg for a golden finish.
Step 4: Bake : Arrange the patties on the prepared baking sheet. Bake for 25–30 minutes, or until golden and crisp. Cool slightly before serving — the filling will be piping hot!
