Korean Ground Beef Bowls with Sesame Vegetables

Ingredients
  

  • For the Ground Beef
  • 1 lb (450 g) ground beef (lean preferred)
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon gochujang (Korean chili paste) or sriracha (optional for heat)
  • 1 teaspoon toasted sesame seeds
  • 2 green onions, chopped
  • Salt and black pepper to taste
  • For the Sesame Vegetables
  • 1 tablespoon sesame oil
  • 1 cup broccoli florets
  • 1 cup julienned carrots
  • 1 red bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame seeds
  • For Serving
  • 3 cups cooked jasmine or short-grain rice
  • Additional sesame seeds, for garnish
  • Sliced green onions, for garnish

Instructions
 

  • Step 1: Prepare the Rice : Cook the rice according to package instructions and set aside. Fluff it with a fork and cover to keep warm while preparing the beef and vegetables.
  • Step 2: Cook the Ground Beef : In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 30 seconds until fragrant. Add the ground beef, breaking it apart with a spatula as it cooks. Once browned, drain any excess fat.
  • Step 3: Make the Sauce : Stir in soy sauce, brown sugar, rice vinegar, and gochujang. Simmer for 3–4 minutes, allowing the flavors to combine and the sauce to thicken slightly. Stir in sesame seeds and chopped green onions. Season with salt and pepper to taste.
  • Step 4: Cook the Sesame Vegetables :In a separate skillet or wok, heat sesame oil over medium-high heat. Add the broccoli, carrots, bell pepper, and zucchini. Stir-fry for 4–5 minutes until the vegetables are tender but still crisp. Add soy sauce and sesame seeds, tossing to coat evenly.
  • Step 5: Assemble the Bowls : Scoop a serving of rice into each bowl. Top with the Korean ground beef and sesame vegetables. Garnish with additional sesame seeds and chopped green onions.
  • Step 6: Serve : Serve warm, allowing each bite to blend the rich, savory beef with the freshness of the sesame vegetables and rice.
