Ingredients
  

  • For the Dough:
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon olive oil
  • 1 teaspoon instant yeast
  • 3/4 cup warm water (adjust as needed)
  • For the Zaatar Topping:
  • 3 tablespoons zaatar spice mix
  • 3 tablespoons olive oil (extra virgin preferred)
  • Optional for serving: labneh, sliced tomatoes, cucumber, olives, or feta cheese

Instructions
 

  • Step 1: In a large mixing bowl, combine the flour, salt, sugar, and instant yeast. Mix well.
  • Step 2: Add the olive oil and warm water gradually, mixing until a soft dough forms.
  • Step 3: Knead the dough on a floured surface for 5–7 minutes until smooth and elastic.
  • Step 4: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until it doubles in size.
  • Step 5: Preheat your oven to 475°F (245°C) and line a baking sheet with parchment paper.
  • Step 6: Punch down the dough and divide it into 6–8 equal portions. Roll each portion into a circle about 6–7 inches in diameter.
  • Step 7: Mix the zaatar spice with olive oil to create a paste. Spread a thin layer of the zaatar mixture evenly over each flatbread.
  • Step 8: Place the flatbreads on the prepared baking sheet and bake for 10–12 minutes, or until the edges are golden and the bread is cooked through.
  • Step 9: Remove from the oven and let it cool slightly before serving.
