- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- Broth and Seasonings
- 6 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper to taste

- 1 cup orzo pasta
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 large lemon (zest and juice)
- 2 cups fresh spinach or kale, chopped
- 2 tablespoons fresh parsley, chopped
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened.
Stir in garlic and cook for 1 minute.
Add broth, oregano, thyme, bay leaf, salt, and pepper. Bring to a simmer.
Add orzo and cook until tender, stirring occasionally.
Add chickpeas and continue simmering for 5 minutes.
Stir in lemon zest, lemon juice, spinach, and parsley. Simmer until greens wilt.
Adjust seasoning, remove bay leaf, and serve hot.
