- For the Lobster Salad:
- 1 1/2 lbs cooked lobster meat (claws, tails, and knuckles), chopped into bite-sized pieces
- 1/4 cup mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard (optional)
- 1 tbsp finely chopped celery (optional, for crunch)
- 1 tbsp fresh chives or parsley, chopped
- Salt and freshly ground black pepper, to taste
- For the Buns:
- 4 New England–style split-top hot dog buns (or brioche buns)
- 3 tbsp unsalted butter, melted
Prepare Lobster Salad: In a bowl, gently combine lobster meat, mayo, lemon juice, mustard, celery, herbs, salt, and pepper. Mix lightly—don’t overwork, so the lobster stays chunky. Chill in the refrigerator while toasting buns.
