Ingredients
  

  • For the Lobster
  • 2 lobster tails (about 200–250 g each) or 1 cup cooked lobster meat
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • For the Salad
  • 3 cups mixed greens (arugula, romaine, baby spinach, or spring mix)
  • 1/2 cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 ripe avocado, sliced
  • Fresh dill for garnish
  • For the Lemon Dill Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • Salt and pepper to taste

Instructions
 

  • Fill a pot with salted water and bring to a boil.
  • Add the lobster tails and cook for 8–12 minutes, depending on size.
  • Remove the lobster and let it cool.
  • Crack open the shells and gently remove the meat.
  • Chop the lobster into chunks and drizzle with a little lemon juice.
  • Prepare the salad base by adding mixed greens to a large bowl.
  • Add sliced cucumbers, tomatoes, red onion, and avocado.
  • In a small bowl, whisk olive oil, lemon juice, mustard, honey, dill, garlic, salt, and pepper.
  • Place the lobster over the salad.
  • Pour the dressing evenly and lightly toss.
  • Garnish with fresh dill before serving.
