Mango Salsa Shrimp Tacos

Ingredients
  

  • For the Shrimp
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1/2 lime
  • For the Mango Salsa
  • 1 ripe mango, diced
  • 1/2 red onion, finely diced
  • 1 small red bell pepper, diced
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste
  • For Serving
  • 8 small flour or corn tortillas
  • Extra lime wedges
  • Shredded cabbage or lettuce (optional)
  • Avocado slices or diced avocado (optional)

Instructions
 

  • Prepare the mango salsa by mixing all salsa ingredients in a bowl. Taste and adjust lime or salt. Chill until needed.
  • Season the shrimp with olive oil, spices, salt, pepper, and lime juice. Toss well.
  • Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side until pink and opaque.
  • Warm the tortillas in a dry skillet or over an open flame.
  • Assemble tacos by filling tortillas with shrimp, mango salsa, and optional toppings.
  • Serve with lime wedges.
