Ingredients
  

  • For the Maple Glaze:
  • ¼ cup pure maple syrup
  • 2 tbsp soy sauce (low-sodium)
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder or 2 minced garlic cloves
  • ½ tsp black pepper
  • For the Salmon and Veggies:
  • 4 salmon fillets (6 oz each), skin-on or skinless
  • 2 cups broccoli florets
  • 2 cups baby carrots or sliced carrots
  • 1 red bell pepper, sliced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional Garnish:
  • Fresh parsley or thyme
  • Lemon wedges

Instructions
 

  • Preheat Oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare Maple Glaze: In a small bowl, whisk together maple syrup, soy sauce, Dijon mustard, garlic, and black pepper.
  • Prepare Veggies: Toss broccoli, carrots, and bell peppers with olive oil, salt, and pepper. Spread evenly on the baking sheet.
  • Prepare Salmon: Pat salmon dry and season lightly with salt and pepper. Place salmon fillets on the baking sheet among the vegetables. Brush each fillet generously with maple glaze.
  • Roast: Roast in the preheated oven for 15–20 minutes, or until salmon flakes easily with a fork and vegetables are tender. Halfway through, brush salmon with extra glaze for a deeper caramelized flavor.
  • Serve: Plate salmon with roasted vegetables. Drizzle any remaining pan juices over the top. Garnish with fresh parsley or thyme and lemon wedges.
