Ingredients

  • For the Salmon
  • 4 salmon fillets (about 5–6 ounces each)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (for brushing or drizzling)
  • For the Maple Mustard Glaze
  • 3 tablespoons pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard (optional, for texture)
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon soy sauce or tamari (optional for umami)
  • 1 teaspoon paprika or smoked paprika
  • For the Roasted Green Beans
  • 1 pound fresh green beans, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  • Step 1: Preheat the Oven : Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it to prevent sticking.
  • Step 2: Prepare the Green Beans : Trim the ends of the green beans, then place them on the sheet pan. Drizzle with 1 tablespoon olive oil and sprinkle with salt, pepper, garlic powder, and onion powder. Toss to coat evenly.
  • Step 3: Season the Salmon : Place the salmon fillets on the same sheet pan next to the green beans. Drizzle lightly with olive oil and season with salt and black pepper.
  • Step 4: Make the Maple Mustard Glaze : In a small bowl, whisk together: Maple syrup
  • Dijon mustard,Whole-grain mustard,Minced garlic,Lemon juice,Soy sauce (if using),Paprika,Mix until smooth and well combined.
  • Step 5: Glaze the Salmon : Brush the glaze generously over the top and sides of each salmon fillet. Let it sit for a minute so the flavors begin to soak in.
  • Step 6: Bake the Salmon and Green Beans : Place the sheet pan in the oven and bake for 18–20 minutes, depending on the thickness of your salmon. The green beans should turn lightly browned and crisp-tender.
  • Step 7: Optional Broil : For deeper caramelization, broil the salmon for 1–2 minutes at the end of cooking. Keep a close eye on it so the glaze does not burn.
  • Step 8: Serve : Remove from the oven. Plate the salmon with the roasted green beans and drizzle extra glaze from the pan over the salmon.
