  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional, for color)
  • 2 tablespoons olive oil
  • For the Creamy Sun-Dried Tomato Sauce
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (oil-packed, drained)
  • 1 teaspoon dried Italian herbs (or oregano + basil)
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon red pepper flakes (optional, for heat)
  • Fresh basil, chopped (for garnish)

Instructions
 

  • Prep the chicken : Pat chicken breasts dry and season both sides with salt, pepper, and paprika.
  • Sear the chicken : Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 4–5 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C).Remove chicken to a plate and keep warm.
  • Make the sauce : In the same skillet, add minced garlic and cook for 30 seconds until fragrant.Stir in sun-dried tomatoes and Italian herbs, cooking for 1 minute. Pour in chicken broth, scraping up any browned bits from the bottom. Lower heat to medium, stir in heavy cream, and bring to a gentle simmer.Add Parmesan cheese and red pepper flakes, stirring until smooth and creamy.
  • Combine and finish : Return chicken to skillet, spoon sauce over the top, and simmer for 2–3 minutes to blend flavors.Garnish with fresh basil.
