- For the Risotto:
- 1 1/2 cups Arborio rice
- 4 cups vegetable or chicken broth, kept warm
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 cups mushrooms, sliced (cremini, shiitake, or button)
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 2 tbsp unsalted butter
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- Salt and black pepper, to taste
Step 1: Heat olive oil and sauté onions, garlic, and mushrooms until softened.
Step 2: Toast Arborio rice in the pan for a few minutes.
Step 3: Add white wine and cook until absorbed.
Step 4: Gradually add warm broth, stirring constantly until rice is creamy and tender.
Step 5: Remove from heat and stir in butter, Parmesan, and fresh herbs. Season to taste.
