- 2 celery stalks, diced

- 3 cups clam juice (from canned clams or bottled)
- 2 cups heavy cream (or half-and-half for lighter version)
- 2 cups diced Yukon Gold or Russet potatoes
- 2 bay leaves
- 1 tsp fresh thyme (or 1/2 tsp dried)
- Salt and freshly ground black pepper to taste
- 2 cups chopped clams (fresh or canned, drained if canned)
- 1 tbsp fresh parsley, chopped (for garnish)
For Serving:

Cook Bacon: In a large pot or Dutch oven, cook bacon until crisp. Remove bacon, leaving drippings in pot.
