Instructions
Step 1: Prepare Onion Mixture : In a bowl, combine thinly sliced onions, green chilies, chopped coriander, cumin seeds, turmeric, chili powder, coriander powder, and salt. Sprinkle in chickpea flour and rice flour.
Step 2: Make the Batter : Gradually add water, 1 tablespoon at a time, just enough to bind the onions into a thick, sticky mixture. Ensure onions are well-coated but not swimming in batter.
Step 3: Fry the Bhajis : Heat oil in a deep pan or skillet over medium-high heat. Drop small portions of the mixture (1–2 tablespoons each) into hot oil. Fry until golden brown and crispy, about 3–4 minutes per side. Remove bhajis with a slotted spoon and drain on paper towels.
