- For the Pastry:
- 2 1/2 cups all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 cup unsalted butter, cold and cut into cubes
- 1/4 to 1/2 cup ice water
- For the Peach Filling:
- 3 cups fresh peaches, peeled and diced
- 1/4 cup granulated sugar (adjust based on peach sweetness)
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1 tsp lemon juice
- For Assembly:
- 1 egg, beaten (for egg wash)
- Sugar for sprinkling
Step 1: Make pastry by combining flour, sugar, salt, and cold butter; add ice water to form dough.
Step 2: Refrigerate dough discs for at least 30 minutes.
Step 3: Mix diced peaches with sugar, cornstarch, cinnamon, vanilla, and lemon juice.
Step 4: Roll out dough and cut into rectangles.
Step 5: Place peach filling on dough, cover with another rectangle, and seal edges.
Step 6: Brush with egg wash and sprinkle sugar.
