Ingredients
  

  • 12 oz (340 g) penne pasta
  • 2 tbsp olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • ¼ cup vodka
  • ½ cup heavy cream
  • 1 tsp red pepper flakes (optional, for heat)
  • 1 tsp dried oregano
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ cup grated Parmesan cheese, plus extra for serving
  • Fresh basil leaves, chopped, for garnish

Instructions
 

  • Step 1: Cook the Pasta : Bring a large pot of salted water to a boil. Cook penne pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.
  • Step 2: Sauté Aromatics : In a large skillet or sauté pan, heat olive oil over medium heat. Add diced onion and cook for 3–4 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  • Step 3: Make the Tomato Sauce : Stir in crushed tomatoes, oregano, salt, black pepper, and red pepper flakes (if using). Simmer for 8–10 minutes, stirring occasionally.
  • Step 4: Add Vodka : Carefully add vodka to the sauce. Simmer for 5 minutes to allow the alcohol to cook off and flavor to meld.
  • Step 5: Add Cream : Reduce heat to low and slowly stir in heavy cream. Simmer for 3–4 minutes until the sauce is creamy and slightly thickened.
  • Step 6: Combine with Pasta : Add cooked penne pasta to the sauce, tossing to coat evenly. If sauce is too thick, add reserved pasta water a little at a time to achieve desired consistency. Stir in grated Parmesan cheese until melted and incorporated.
  • Step 7: Serve : Transfer pasta to serving plates or a large serving dish. Garnish with fresh basil and additional Parmesan cheese. Serve warm immediately.
