Ingredients
  

  • For the Salmon:
  • 4 salmon fillets (6 oz each), skin-on or skinless
  • Salt and pepper, to taste
  • 1–2 tbsp olive oil
  • For the Pesto Crust:
  • 1/2 cup basil pesto (store-bought or homemade)
  • 2 tbsp grated Parmesan cheese
  • 1 tsp lemon zest
  • 1 clove garlic, minced (optional)
  • For the Vegetables:
  • 1 cup cherry tomatoes, halved
  • 1 tsp olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions
 

  • Step 1: Prepare Oven and Baking Dish: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with olive oil.
  • Step 2: Prepare the Salmon: Pat salmon fillets dry and season lightly with salt and pepper. Place salmon on the prepared baking sheet, leaving space between fillets.
  • Step 3: Make and Apply Pesto Crust: In a small bowl, combine basil pesto, Parmesan cheese, garlic (if using), and lemon zest. Spread a generous layer of pesto mixture on top of each salmon fillet.
  • Step 4: Prepare Cherry Tomatoes: Toss halved cherry tomatoes with olive oil, salt, and pepper. Arrange tomatoes around the salmon on the baking sheet.
  • Step 5: Bake the Salmon: Bake in preheated oven for 15–18 minutes, or until salmon is cooked through and flakes easily with a fork. Optional: Broil for 1–2 minutes at the end for a golden, slightly crispy pesto topping.
