Ingredients
  

  • 1 lb (450 g) ribeye steak (thinly sliced against the grain)
  • 4 fresh hoagie rolls or sub rolls
  • 1 large onion (thinly sliced)
  • 1 green bell pepper (optional, thinly sliced)
  • 1 cup mushrooms (optional, sliced)
  • 2 tbsp olive oil or butter
  • Salt and black pepper (to taste)
  • 8 slices provolone cheese (or American cheese, or Cheez Whiz for classic Philly style)

Instructions
 

  • Prepare the Steak Place ribeye in the freezer for 30–40 minutes to firm up for easier slicing. Thinly slice the steak against the grain into paper-thin strips.
  • Cook the Vegetables Heat 1 tbsp olive oil or butter in a large skillet over medium heat. Add sliced onions (and peppers/mushrooms if using). Sauté until softened and golden brown, about 7–8 minutes. Remove and set aside.
  • Cook the Steak In the same skillet, add another tablespoon of oil. Increase heat to medium-high, add the sliced steak, and season with salt and pepper. Cook until just browned, about 3–4 minutes.
  • Assemble the Sandwich Reduce heat to low, add the cooked onions back to the skillet, and toss with the steak. Lay cheese slices over the mixture and let them melt. Split hoagie rolls, lightly toast them, and fill with the cheesy beef mixture.
  • Serve Immediately Serve hot with fries, chips, or a simple salad.
