Pork and Cheese Quesadillas with Salsa

Ingredients
  

  • For the Quesadillas
  • 1 pound cooked pork (shredded, chopped, or thinly sliced)
  • 1 tablespoon oil (vegetable or olive oil)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups shredded cheese (cheddar, Monterey Jack, pepper jack, or a blend)
  • 8 medium flour tortillas
  • For the Salsa
  • 2 tomatoes, diced
  • 1/4 cup finely chopped onion
  • 1 jalapeƱo, seeded and minced
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • Salt to taste
  • Optional Toppings
  • Sour cream
  • Guacamole
  • Hot sauce
  • Pickled jalapeƱos
  • Extra salsa

Instructions
 

  • Heat oil in a skillet over medium heat. Add onions and cook until softened.
  • Add garlic, pork, cumin, chili powder, smoked paprika, salt, and pepper. Cook until heated through.
  • In a bowl, combine salsa ingredients and stir. Set aside.
  • Heat a clean skillet over medium heat. Place a tortilla in the pan.
  • Add a layer of cheese, then add a portion of the pork mixture, then more cheese.
  • Top with another tortilla and cook until golden brown on the bottom.
  • Flip and cook the other side until crispy and the cheese has melted.
  • Repeat for remaining tortillas.
  • Slice into wedges and serve with salsa and toppings.
