Ingredients

  • 3 cups cooked rice (preferably day-old, cold)
  • 6 oz (170 g) shrimp, peeled, deveined, and chopped
  • 6 oz (170 g) ground pork or finely chopped pork
  • 2 large eggs, beaten
  • 3 tablespoons vegetable or peanut oil
  • Vegetables u0026 Aromatics
  • ½ cup onion, finely chopped
  • ½ cup carrots, diced
  • ½ cup green peas
  • 3 cloves garlic, minced
  • 2 green onions, sliced
  • Seasonings
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon white or black pepper
  • Salt, to taste

Instructions
 

  • Heat 1 tablespoon oil in a large wok or skillet over medium-high heat.
  • Add beaten eggs and scramble lightly; remove and set aside.
  • Add another tablespoon oil and cook pork until browned and cooked through.
  • Add shrimp and cook until pink; remove pork and shrimp together.
  • Add remaining oil, then sauté garlic, onion, carrots, and peas.
  • Add rice and stir-fry, breaking up clumps.
  • Return pork, shrimp, and eggs to the pan.
  • Add soy sauce, oyster sauce, sesame oil, and pepper; toss well.
  • Stir in green onions and adjust seasoning before serving.
