Heat oil in a pan over medium heat. Add onion and sauté until soft.
Add garlic and cook until fragrant.
Stir in curry powder, turmeric, and chili powder. Cook briefly to release aroma.
Add ground pork and cook until browned.
Add diced potato, soy sauce, sugar, salt, and water. Simmer until potatoes are tender and mixture is thick.
Remove filling from heat and allow it to cool completely.
Preheat oven to 375°F (190°C).
Roll out puff pastry and cut into squares or circles.
Place a spoonful of filling in the center of each pastry piece.
Fold pastry over filling, seal edges with a fork, and brush with egg wash.
Bake for 20–25 minutes until golden and puffed.
