Ingredients
  

  • For the Pork Roulade:
  • 2 lb (900g) pork loin, butterflied
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 8 oz (225g) mushrooms, chopped
  • 3 cups fresh spinach
  • 1 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • For the Sauce (Optional):
  • 1 cup chicken or vegetable stock
  • 1/2 cup dry white wine
  • 1 tablespoon butter
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions
 

  • Step 1: Butterfly and pound pork loin to even thickness; season with salt and pepper.
  • Step 2: Sauté garlic, onion, mushrooms, and spinach; mix in Parmesan.
  • Step 3: Spread filling over pork and roll into a tight roulade; tie with kitchen twine.
  • Step 4: Sear roulade in skillet until golden on all sides.
  • Step 5: Roast at 375°F for 35–40 minutes until cooked through; let rest 10 minutes.
  • Step 6: Prepare optional pan sauce by deglazing with wine and stock; thicken if desired.
